Description
A delicious blend of hand-picked Chardonnay, Chenin Blanc and Pinot grapes. Grapes are selected from low-yielding (50 hectolitres / hectare) vineyard sites identified for the outstanding quality of their soil and sub-soil. The 2nd fermentation - the "prise de mousse" - takes place slowly in the bottle, ageing on its lees for a full 18 months to extract secondary aromas (3 months longer than the statutory minimum for champagne. The wine has a delicate foam with a lingering sparkle; fresh and graceful aromas with notes of white flowers and citrus aromas. The palate is fresh and creamy on the attack with lemon flavours, then the wine develops fruit jam and mineral notes, lingering on the finish.
