Description
This wine was made from only the free run juice - this was cool fermented and then left on its lees for 2 months, it did not undergo Malo lactic fermentation(MLF). This led to a fresh vibrant crisp wine with a weight and complexity from the lees aging, but no creamy richness associated with MLF.
The wine was made by Anthony de Jager who commented that "This is the first Chenin Blanc under the Fairview label for a number of years, and is the first single varietal bottling from our Darling vineyards. The wine is fresh and dry, with balanced acidity and is a perfect summertime drinking wine. We have not used any wood on this wine, as the fruit is crisp and delicate and I did not want to overpower these flavours."
