If you love Champagne but think it’s a little pricey, then Crémant is a very smart alternative. It's made the same way as Champagne, but doesn't have the premium price tag. Aimery is a classic example. It’s made at the Sieur d'Arques winery in Limoux, southern France. In 1531 Limoux became famous thanks to a monk at the Abbey of Saint-Hilaire who produced the first effervescent wine, long before Champagne. This light gold vintage bubbly is a blend of Chardonnay, Chenin Blanc and Pinot Noir from low-yielding sites. The wine is made using the méthode traditionnelle and is left to age for 18 months on its lees in bottle. With the majority of the blend Chardonnay, it has good ageing potential.
