If you love Champagne but think it’s a little pricey, then Crémant is a very smart alternative. It's made the same way as Champagne, but doesn't have the premium price tag. Aimery is a classic example. It’s made at the Sieur d'Arques winery in Limoux, southern France. In 1531 Limoux became famous thanks to a monk at the Abbey of Saint-Hilaire who produced the first effervescent wine, long before Champagne. This pale pink bubbly is a blend of Chardonnay, Chenin Blanc and Pinot Noir from low-yielding sites. Soft strawberry, white peach and pear aromas. Made using the méthode traditionnelle, the wine is left to age for 12 to 15 months on its lees in bottle giving a subtle brioche character. Gentle pop open a bottle for an elegant aperitif.
