If you’re ever in McLaren Vale in South Australia and you take a drive down Chalk Hill Road, you’ll pass a number of fairly innocuous looking sheds. Inside one of them is a band of ‘young minded’ winemakers, working on a range of tasty projects, just like this sumptuous Semillon. Way & Cat is short for ‘wayfaring catador’, catador being Spanish for taster. So the name is a tribute to how the team source their fruit – they head out into the countryside to taste the grapes of their vine-growing friends. When they find the selections they like, they vinify each parcel separately and then blend the results into fruit-first expressions of the varieties they chose. Creamy with a citrus zing, this is a hit with chicken or butternut squash risotto.
