If you’re not yet a convert to the wonderful, rich, beautifully balanced flavours of top quality sherry, here’s a great place to start. Palo Cortado is a highly prized, magnificently complex sherry style, combining characteristics of Amontillado and Oloroso. This one from the renowned Barbadillo producer uses solera wines aged for at least 30 years. No wonder it is so complex. Founded in 1821, Barbadillo has world renown. Indeed, in 2015 it was named ‘Best Winery of the Year’ by Guía Peñín and its Manzanilla Solear was awarded ‘Best Manzanilla in the World’. Seventh generation, the company is still one of the most innovative in the wine world and boasts 500 hectares of Jerez vines and the largest stocks of Palo Cortado wines for blending.
