If you’re looking for the perfect end to a dinner, you should open a half bottle of R de Romer du Hayot. Being the second wine from this superb little Second Growth estate, this unctuous Sauternes offers exceptional value. The property was established in the mid 19th century when the new techniques of Sauternes production were just being discovered. So it’s fair to say the du Hayot family played a small role in the development of this much admired style of wine. It’s crafted with grapes affected by botrytis, a moisture sapping mould that causes affected fruit to yield sweeter, more complex, intense flavours. All this is kept in perfect balance by a linear backbone of crisp acidity. A superb partner for foie gras, blue cheese or fruit tart.
