The Graves is renowned for its classic whites, the most famous of which are Domaine de Chevalier and Château Haut-Brion. These are among Bordeaux’s finest and rarely are they affordably priced like this. Château des Perligues is located in the village of Illats, in the heart of the appellation. The vineyards are planted on the famous gravel soils this region is named after and which lend a mineral zip to this aromatic white. It’s a classic blend of Sauvignon and Semillon with racy citrus fruits and floral freshness. Left a few months on its lees with batonnage (stirring), it has a creamy weight balancing the grassy, honeyed lemon notes. This is a wine to linger over as it develops in your glass. Enjoy with prawns with lemongrass and ginger.
