Ernest Cazals was a cooper from the Hérault who sold barrels in Champagne. He fell in love with the region and in 1897 established a Champagne house in Le Mesnil-sur-Oger, one of the region’s most highly rated villages. Decades later his grandson Claude Cazals invented the gyropalette, which made riddling (hand turning of bottles) all but obsolete by achieving the same result with hundreds of bottles at a time. Despite this breakthrough, the family business remains an artisanal affair and is today run by Delphine Cazals. Le Clos was first produced as a single vineyard Champagne in 1995. From old vines surrounding the family home, this superb 2005 Grand Cru is the cream of artisan Champagnes. A magnificent wine for special occasions.
