Doisy-Védrines has been in the Castéja family since 1840 and is today run by Pierre Castéja. He maintains exceptionally high standards at the cellar and will declassify a whole vintage if he believes the wines won’t be up to Grand Vin standard. Batches of grapes are fermented separately in oak barriques, then left to mature. After a year, each vat is tested to see if it's worthy of inclusion in the Grand Vin. 2019 was a low-yielding vintage in Sauternes, due to warm, damp spring conditions, but the little that was harvested (a meagre 10hl/ha) was superb. Critics describe the "racy freshness" of this wine; Suckling calls it "refined and fresh". One to savour on its own or with a strawberry tart with crème anglaise or blue cheeses.
