The beautifully restored, medieval Château de Francs has been the pet project of school friends Hubert de Boüard of Château Angélus and Dominique Hébrard, formerly of Château Cheval Blanc, since the 1980s. With such illustrious backgrounds, it was perhaps surprising that the two decided to invest in little known Côtes de Francs, Bordeaux’s smallest appellation. But it has proved a propitious move. Made mostly from hand-harvested Merlot, Les Cerisiers seduces with gorgeous aromas of blackberry, plum, crème de cassis and violet. It’s full bodied and intense with ripe, concentrated fruit, while ageing for over a year in oak casks (a third new) lends complexity and roundness. Open early and enjoy this fine claret with confit de canard or steak.
