Enjoy here a great vintage Bordeaux, with real depth and layers of mellow fruit. It's from a family estate that dates back centuries – to the Middle Ages, in fact, and the Ordre des Templiers, who used to greet pilgrims on the Saint James Way. The name of the estate means turtledove in ancient French dialect, after the birds that used to come and nest on the property each year. For four generations it has been run by the Bergey family, with Mélissa and Loïc in charge today. This silver medal winning wine has aged very gracefully, now showing silky mellow red fruits, rounded tannins with hints of cedar and tobacco. Stand upright for a few hours in case of sediment and preferably decant. A top choice with roast pork belly or lamb shanks.
