Founded in 1835, Gonzalez Byass is one of the top houses in Jerez, just awarded 'Best Producer in Spain 2022' by Mundus Vini. The family make sherry across the range – from amazing, layered Amontillados like Del Duque, to Palo Cortados and Olorosos to the world-famous, bone-dry Tío Pepe. Each barrel is marked with a vertical strike for Fino and, when its layer of white flor ceases, it may be classed as Amontillado and allowed to mature slowly. This mesmirising sherry was aged in the solera system a full 30 years to develop a glorious array of nutty, fruity, caramel and toasty sweet spice flavours. Take your time. It's like a meal in itself – compelling, complex, with luscious fig and plum, woody notes and sweet spice, finishing dry.
