If the name Tokaji rings a bell, it's likely to be for its fabulous sweet wine, Tokaji Aszu, which graced the courts of Europe for centuries. Its star grape is Furmint and today most of this amazing variety is made into dry whites. We say 'amazing' because Furmint is one of the finest grapes for showing off purity and terroir (the soil and climate it's grown in) – much like Chardonnay in Burgundy and Riesling in Alsace and the Mosel. The soils of Disznókö are complex and volcanic, renowned for bringing a bracing freshness and purity of fruit to a wine. Using all hand picked grapes, the wine was lees aged for six months and offers dazzling lemon and crunchy pear fruit, with just a hint of herbal spice. Superb solo, excellent with fish.
