Gevrey-Chambertin is one of the star appellations of the Côte de Nuits, highly regarded for its potent Pinot Noir. For many it provides the definition of classic red Burgundy. At the Bouvier estate in Marsannay, the family makes wines from six different appellations – from villages to Grand Cru. For each, their philosophy is to create “a mouthfeel that evokes silk, taffeta and velvet”. The wines must also express the individual character of their specific site – they must be “vibrant, living wines, which have a soul”. Harvesting the grapes at tip-top ripeness, meticulous care at every stage in the winery and precision matching to French oak barrels result in this fine Gevrey. Open early, decant and enjoy with game or seared tuna.
