It’s all down to winemaker Vincent Maurel, who’s been winemaker at Domaine Saint Hilaire for over 20 years. He knows exactly how to handle this exuberant grape – making sure the grapes are picked in the cool of the night and fermented at low temperatures to retain that all-important freshness. It means that you still get the ripe exotic fruit and floral bouquet typical of Viognier but there’s also a crisp citrus zip keeping it lively and fresh. Fantastic with spicy seafood dishes.
