Domaine Servin is a fabulous, long standing family cellar, less well known than it should be. That’s despite Wine Advocate marking them out as deserving a higher reputation. The Servins can boast over 200 years of experience in Chablis. Now, added to that is the skill of François Servin’s brother in law, Aussie winemaker Marc Cameron. This fine Premier Cru is from a southwest site, only separated from Grand Cru Les Blanchots by a narrow ravine. It produces grapes of wonderful aromatic intensity and purity. 2018 was a fine vintage in terms of quality, as well as yields. Rare. Marc teases out the richness of the fruit, carefully fermenting the wine, ageing it on lees and capturing the flavour in bottle. Open early to let it breathe or cellar.
