Domaine Servin is a fabulous, long standing family cellar, less well known than it should be. That’s despite Wine Advocate marking them out as deserving a higher reputation. The Servins can boast over 200 years of experience in Chablis. Now, added to that is the skill of François Servin’s brother in law, Aussie winemaker Marc Cameron. This fine Premier Cru is from a southwest site, only separated from Grand Cru Les Blanchots by a narrow ravine. It produces grapes of wonderful aromatic intensity and purity. 2020 has been pronounced a "great", albeit exceptionally early vintage. Marc teased out the richness of the fruit, carefully fermenting the wine, with long ageing on lees for added weight and texture. Open early to breathe or cellar.
