Furmint, called Sipon in Slovenia, is probably best known for its wonderful sweet Tokaji wines, made in Hungary. However, Furmint is also showing its star quality here as a superb dry white. Jancis Robinson describes the grape as having “the most exciting combination of nerve, fire and ageing ability”. At an amazing 8 years old, this white is still showing verve and vivacity, along with rounded fruit, spice and weight. It’s truly intriguing. This is from one of the finest wineries in Slovenia, a very modern cellar, built in 2007, but located in a former monastery. It lies near the border with Austria, in mountain foothills, no doubt influenced by the pure crisp whites of the country next door. Chill gently – tasty with creamy sauced fish.
