For a pure Chambolle that sings of its fruit and terroir, choose this fine Bertheau wine. François took over from his father Pierre in 2003 and has since had no shortage of suitors for his vineyard holdings. They all lie in Chambolle and include two of the most desirable sites in Burgundy. He practices ‘lutte raisonnée’ and allows the fruit to determine the style of the wine. He gives it every chance by limiting manipulation in the vineyard and winery, using minimal new oak and very little racking. The result is a wonderfully delicate, perfumed style that has earned him cult status among sommeliers. For this 1er Cru, he uses grapes from Les Baudes (just below Bonnes Mares), Groseilles, Gruenchers, and Noirots. Wonderfully complex and long.
