First we embraced the Cabernets and Merlots that Chile wowed us with, then wine lovers discovered the country had the ideal climate for bright, fresh whites. Sauvignon Blanc, in particular. Healthy, sunfilled vineyards, refreshing coastal breezes and gentle slopes all add to the ripe fruit and crispness of its whites. They offer a style midway between New World exuberance and French elegance. Goleta is a no-pretensions, easy going, fruit forward white, good value too. Keep a bottle in the frige, ready to go. It's a refreshing glass on its own, yet works just as well with lighter hors d'oeuvres, herby white fish or a gentle risotto. A lemony, herbaceous and green pepper white.
