Hawkstone Brewery was first started by Rick Keene of Cotswold Brewery, who joined up with new-to-farming Jeremy Clarkson at his Diddly Squat Farm to use his high-quality barley. They quickly gained a reputation for extremely tasty lager and beer. With a cider fanatic on board – Kaleb Cooper – they decided to add one of those to the range. Now fifth-generation cidermaker Guy Lawrence has joined them, too. They ferment the fresh-pressed juice from local heritage apples Dabinett, Kingston Black, Brown Snout and Strawberry Normans in oak barrels, with Champagne yeast, maturing it for six months for fuller flavour. The cider is then cold-filtered, never pasteurised to ensure maximum delicious flavour. Chill and enjoy.
