Il Cedrone is crafted using the classic Amarone grapes of Corvina, Corvinone and Rondinella by Cantina di Negrar in the Valpolicella region. All the grapes are hand-picked and it’s aged in large barrels for just three months which gives it a gossamer cloak of oak without taking away from the freshness and fruitIt contains a portion of ‘Ripasso-style’ wine giving it a lovely richness and depth of flavourIl Cedrone is named after Gallo Cedrone, a rare bird that lives in the mountains surrounding Valpolicella. A seductive, spicy, plummy nose leads into a mouthfilling palate of juicy plums and mulberries. Warming notes of cinnamon, cigarbox and mint add complexity, with the oak adding a hint of tobacco. With perfectly balanced tannins and a soft, juicy lingering finish, it will pair superbly with grilled meats.
