Jean-Marc Sauboua is our talented, Haut-Brion trained winemaker at Le Chai au Quai. Not only is he very good at his job, but he has an enviable network of contacts, which gives him access to terrific parcels of grapes. So while this rich claret may have Médoc on the label, more often than not, J-M has sourced the fruit from grander appellations. Unusually for Bordeaux's Left Bank, this wine has a high percentage of Merlot, with Cabernet playing a supporting role. Bordeaux was blessed with another great vintage in 2019 with excellent ripeness and fruity depth, flattered by the subtle vanilla oak from a few months in barrel and supported by silky tannins. Let the wine breathe in a jug or decanter and serve at a Sunday roast sort of occasion.
