Winemaker at our picturesque cellars on the banks of the Dordogne river, Castillon, is Mark Hoddy. He was very excited to find a small patch of 40 year old Roussanne vines at his friend, Joseph Bousquet's estate, from which Joseph makes this glorious white. The family property lies up in the hills north of Montpellier. There grapes ripen slowly, so they retain aroma and freshness. Add in the four decades' age of the vines and you can understand how this wine can taste so good after after five years' maturation. It's been in barrel for 24 months up at the Le Chai cellars, with daily stirring of the lees (the sediment left after fermentation) to lend a lovely rounded creaminess. Serve only lightly chilled with creamy chicken or fish pie.
