A glorious, rich and exotic white, made very much in the style of a grand Châteauneuf du Pape Blanc. It uses the same key grape – Roussanne – all from 40 year old vines for fabulous intensity, while stirring of the lees lends a luscious creaminess.

Winemaker at Le Chai au Quai for the Languedoc Roussillon wines is Mark Hoddy. He was very excited to find a small patch of 40 year old Roussanne vines at his grower friend, Joseph Bousquet's estate, from which Joseph and Mark makes this glorious white. The family property lies up in the hills north of Montpellier. There grapes ripen slowly, so they retain aroma and freshness. Add in the four decades' age of the vines and you can understand how this wine can taste so good after after four years' maturation. It's been in barrel for 24 months at the Le Chai, with regular stirring of the lees (the sediment left after fermentation) to lend a lovely rounded creaminess. Serve only lightly chilled with creamy chicken or pork, or fish pie.
