To let you in on the secret, Le Roi Soleil comes from Languedoc’s superb Cabrières, the same tiny southern French appellation as the prized Clos du Temple. Sitting on the slopes, in the centre of five-valley appellation that spans out like a star, Cabrières is the cradle of fine rosé. Cooling wind channelled from the valleys offer a welcome relief to the endless sunny days. Paired with the high altitude, it’s a winemaker’s dream. No wonder this tasty drop was served at royal banquets to The Sun King himself (Louis XIV) in the 14th century. Its reputation has grown down the centuries, but production remains tiny. So grab it while you have the chance! Brimful of white peach and raspberry, it’s seriously cool with an elegant mineral edge.
