Maison Sassy is a bastion of Normandy tradition. They are based in Château de Sassy, the family estate of Audiffret Pasquier, who've been making great Calvados and ciders since 1852. Their recipe is based on the same the house was founded on, using apples from its own organic orchards. Firstly they make a cider, then distill it into eau de vie. The spirit is initially put into small 300-litre oak barrels to gain structure, then into 2000-litre foudres to mellow out and slowly release the 'angel share' over a period of at least two years. Every vintage 30% of the year's Calvados is kept back as the 'reserve' spirit and blended with previous years, much like the solera system in Jerez.
