This red with intense cherry and spice notes is from Cantina Negrar, an award winning cellar in the heart of Valpolicella, just a few kilometres from Verona. Star winemaker and trained oenologist Daniele Accordini works closely with small local growers, encouraging the highest standards in the vineyard as well as respect for the natural environment and biodiversity. For this red he has ensured plenty of richness, weight and complexity by fermenting the wine with a portion of partially dried Amarone grapes – a technique known as Ripasso. From a top vintage, the wine has rich cherry flavours with chocolatey notes and an attractive ‘bite’. It pairs beautifully with pasta with tomato and basil sauce, lasagne or a spicy pork casserole.
