Once the preserve of warm summer days, rosé is today a ‘go to’ glassful any time of the year. What's more, a good rosé can conjure up the magic of summer whatever the weather outside. Domaine d’Estienne is a 40-hectare property in Provence’s Coteaux de Varois we discovered last year. There, at heights of up to 420 metres above sea level, its vineyards enjoy warm days cooled by sea breezes, so the grapes retain all their appetising freshness and aroma. This is a classic blend of the region – raspberry-rich Grenache, with herbal-scented Syrah, Carignan, Rolle and Cinsault, all cool fermented and bottled early for freshness. Chill and serve with fresh seafood, grilled chicken, sushi or lighter vegetarian dishes. Or simply as a glass solo.
