Clairet is Bordeaux’s unique version of a very deep rosé. Almost red, but one that is so deliciously fruit filled and rounded at the edges that you want to chill it! It’s a style that has almost disappeared. Chai winemaker Jean-Marc Sauboua took all-Merlot grapes from a vineyard with sustainability at its core. It lies just across the river from St-Émilion, on the finest, pure-limestone soils. What colour! Deep cherry and cassis, rounder and less citrusy than normal pinks, yet totally refreshing. A winner with both red and rosé drinkers solo or try with griddled salmon.
