This is a tiny production wine from a cellar up in the Tramuntana mountains. The team firmly believe in minimal intervention, so very little is added during the winemaking process. Not even yeast – natural yeast on grape skins does the job. Native varieties are the main focus – Premsal and Giro Ros for whites, Gorgollassa, Callet and Mantenegro for reds – with a few extra besides. Champion of these varieties is Carlos Rodriguez Furthmann, the self taught winemaker at the winery. Early on in his career, his talent was spotted and he was lucky to be mentored by one of the island's top winemakers. For this white, he worked with Reg Ward - a Kiwi winemaker now firmly embedded in Mallorcan culture! Serve with seafood, as you would in Mallorca.
