This is a ripe, fruit-filled red from a family estate deep in the heart of Cathar country. It is a wild landscape, dotted with ancient castle ruins, perched impossibly high on top of craggy hillsides. In 1919, Joseph Cases founded Domaine Saint Martin, close to Carcassonne and the Corbières mountains, using profits he made from selling matches to Spain. He chose an idyllic site for his vineyards. Surrounded by pines, holm oaks, almond trees, cistus and broom, it's a fragrant spot. It enjoys a warm Mediterranean climate and has proved perfect for Cabernet, as well as other non-native varietals. Third generation Henry Cases made this intense red in their 100th anniversary year. Crunchy cassis and wild herbs, it's great for grilled meats.
