Telmo Rodriguez comes from one of Spain's most iconic family estates – Remelluri in Rioja. He travelled the world to gain experience, then returned and turned a brilliant wine into something even finer. Some feat! He did the same in Ribera del Duero, then looked to less well-trodden paths. This is his exemplary Gaba do Xil, from five slate-soil plots in the green hills of Valdeorras in Galicia. Godello is the star grape, one which excels in this region. From the ripe 2020 vintage, the wine was fermented with native yeasts and aged on its lees for four months, which accounts for its creamy weight and texture. Chill and serve with cream-sauced chicken or seafood, or with tapas – marinaded mushrooms, roasted peppers, jamón and charcuterie.
