As the world’s thirst for Prosecco rages on, we’re always on the lookout for great tasting, family made examples. A good friend put us in touch with the Tombacco family, founded a century ago by the current owner, Cristian's, grandfather, Battista Tombacco. It's 100% crafted from the family’s estate grown Glera grapes, gently pressed prior to a long, slow, low temperature fermentation. Cristian then left the wine on its lees for 20 days for extra layers of creamy complexity to balance the citrus notes, before adding the sparkle and bottling. Wonderful notes of apple and rose petals lead to refreshing mouthfuls of apple, lemon and tropical fruit with tongue tingling bubbles. Serve well chilled as a delightful aperitif any time.
