A hard-working GP by day, the Doctor is a fully signed-up grape-grower and aspiring winemaker by night. His tonic is BIG, bold and dark – a unique, delicious blend of Tannat (rare), Cabernet and Shiraz. We’re not sure what it’ll cure, but it’s tasty.

Being a doctor can be stressful, so what better way to unwind than nurture a few grapes, hand plunge a few vats and guide the precious wine into barrel. This is a delicious collab between a doctor-cum- winemaker and a few grower friends in premium McLaren Vale and the Adelaide Hills. During the growing season Dr Matt keeps an eye on a few rows of vines there and picks out the richest, ripest grapes for his tonic. He makes wine the old-fashioned way – on a miniature scale with basket presses and open-topped fermenters. The aim: to make a red with the firm 'legs' for ageing. He skilfully blended dark, ripe Tannat (very rare in Oz) with Cabernet and Shiraz. A rich mouthful with mellow fruit, spicy oak and mint. Ideal with a Sunday roast.
