Dutch born winemaker Floris Lemstra and his wife Victoria have owned Château Canet, close to Minervois, for around 25 years now. They love to produce modern, yet authentic wines from the splendours nature lends them. They make award winning Minervois, white and red, Picpoul de Pinet and this charmingly fresh Sauvignon Blanc. The grapes all come from higher altitude vineyards, in the foothills of the Pyrenees. There the vines are cooled by the Atlantic but also influenced by the proximity of the Mediterranean. Picked in the cool early morning, fermented at a low temperature, this 2018 white was lees aged for five months, which has lent a creamy edge to the wine's stony, lemony character. It's a great seafood or risotto wine.
