Southern French winemaker Hervé Sabardeil likes a challenge! He and our buyer, Mark, were tasting Gérard Bertrand's amazing Blanc Taché – an ultra pale, ageworthy rosé called Clos du Temple that sells for over £160 a bottle. They came up with a plan to make a very similar style, but at a much more sensible price. So the project began - first to find a parcel of grapes that would stand up to the test. Those were a batch of pristine Pinot Gris from, of all places, the Languedoc and grown by the enviably talented Jesús Aledo, a Spaniard, who's put roots down in France. The rest was down to Hervé's talent. With a very pale hint of pink on its skins, this grape's ideal for the wine. Great freshness, delicate flavour, supreme! And will improve!
