We make a superb, award-winning fizz from the great grapes of Windsor Great Park Vineyard. But gin? It started in the bountiful 2018 vintage, when we had a little Chardonnay spare. In Champagne, they would distil into a marc de Champagne. We decided to be very British and distil it into a very special gin. We took inspiration for its botanicals from Savill Gardens, next door to the vineyard - the only privately owned Royal Garden open to the public all year round. It's full of pungent seeds, flowers and leaves. We searched out the best nose in the business, with a PhD in gin, to advise us and this is the fragrant result. No Chardonnay in this release, but abundant juniper, lemon verbena, thyme, elderflower. A delightful base for any G&T.
