When our Buyer went on the search for a standout Prosecco (in looks, quality and price) his first thought was to knock on the door of our long-standing friend Paolo Sacchetto. Paolo is based in Veneto’s Prosecco region, following in the footsteps of his father and grandfather. Most importantly he’s the man behind our much-loved bubbly Fili, so we knew he’d have something good! He works hard in the vineyards, many of which are in the superior DOCG areas. And in the cellar he uses the latest methods to extract only the clearest juice, including a very gentle horizontal press and slow, cool fermentation to lock in all the subtle aroma. The winning result is this moreish pear and apple-scented Prosecco, with a very gentle tongue-tingling fizz.
