Alain Vauthier is the owner of both the world-renowned Château Ausone and Château Moulin Saint George. So no surprise the latter, lying just east of the former, is often referred to as a baby Ausone. The Vauthier family have owned it since 1921 and the property boasts south-west-facing slopes on the Pavie slope – just 7 hectares of clay and limestone soils, growing mostly Merlot and a little of Cabernet Franc. Yields are kept deliberately low and the grapes all picked by hand, while ageing is 100% in new oak barriques for up to 20 months. Bottled unfiltered to ensure maximum richness, there is a chance the wine will develop sediment as it ages. Simply stand the bottle upright a few hours before decanting and serving. Ideal to cellar.
