Founded in 1835, Gonzalez Byass is one of the top names in Jerez. The family produce sherry across the range – from amazing, layered Amontillados and Olorosos to the world-famous, bone-dry, savoury Tío Pepe and this fine Fino. Pure Palomino grapes are fermented, then each cuvée classified, with the best ones hived off for Fino. They are fortified to 15.5% and enter the solera system of the cellar, where they age in American oak barrels for six years, gradually developing a layer of yeast called 'flor'. This is key to the Fino style and helps the fortified wine to develop mesmirising yeasty, nutty flavours with hints of the sea and minerality. It is delicious to sip with salted almonds, jamón but also with Japanese dishes including sushi.
