There are only a handful of wineries in Australia’s newly emerging Ferguson Valley and one of the most exciting is a tiny property called Ironcloud. Generously flavoured yet elegant and silky, it’s one of those wines that every time you take a sip you taste something new. First, the juicy cherry and raspberry fruit come to the fore, followed by delicate floral notes, with pepper, spice and savoury notes developing on the finish. Matured in French oak barrels for around 15 months, it has a softness of texture and glossy tannins that give it real finesse – a great match for duck, terrines and barbecued leg of lamb.
