There’s a lovely bit of destiny behind this oil. Juan Olivares is a self-proclaimed “soil freak” whose family has been making olive oil for generations – it’s not only in is blood, but also in his surname! His partner in the project is Carolina, a lifelong friend who studied biology and medical sciences at university, before taking a Master’s in olive oil tasting to learn more about making truly quality oils.
Together they’ve been transforming their family groves since 2016, switching to certified organic farming and putting biodiversity and soil health at the heart of everything they do.
The result is a small-batch extra virgin olive oil high in polyphenols, made from olives milled within hours of picking. Fresh and elegant, with apple, tomato and cut-grass notes, it finishes with a gentle peppery kick. Drizzle it over salads, rice, vegetables, mango or Manchego.
