The Wine
Based in the heart of Gevrey-Chambertin, this estate is run by Florence and her husband Simon, who first adopted organic methods, swiftly followed by biodynamic practices too. This is indicative of the painstaking level of care they adopt in the vineyards, also evident in the winery. The skilled husband and wife team favour the use of whole bunch fermentation (50% in this wine), tailoring the fermentation of each cuvée according to its needs. You can taste the lengths they go to in the wine. The grapes for this expressive Gevrey come from six climats, with vines over 60 years old, and the wine gently matured in a quarter new oak for complexity. A delightful red with purity of fruit and freshness for ageing. Open early and decant.
