On the cool, higher slopes of the region, often close to the coast. There warm sunny days are tempered by cooling breezes that help retain freshness, delicacy and finesse. You’ll find all this, plus cherry and raspberry ripeness, and gentle, toasty spice from a little ageing in Burgundian oak barrels. A great red with pan-fried duck, roast lamb or mushroom risotto.
