The Story Behind the Bottle
From a family long established in Chablis, Samuel Billaud started his winemaking career at the family's Domaine Billaud-Simon in 1985. He set up on his own in 2009 and we’ve been working with him ever since. Today he’s considered one of the finest winemakers in Chablis. His Les Vaillons uses grapes from prized 60-year-old vines within the Premier Cru. Long lees ageing lends a richness and breadth to the wine, whilst retaining a core of intensity and freshness.
