The Ulithorne winery was founded in 1950, when Bob Whiting planted 30 acres of vines in McLaren Vale’s now-famous sub-region of Blewitt Springs. Over the decades, it has cemented its reputation as an iconic Australian producer, renowned for its “small-batch, high-quality wines” (Halliday Wine Companion).
Ulithorne Singularis is the estate's top red, a Shiraz masterpiece. They hand-pick fruit from a prized few rows of their Blewitt Springs vineyard, all over 65-years-old. The winemaking is slow and patient, with basket pressing and open fermentation. In short, time-consuming and expensive. But the result is so rich and intense, a pure expression of those beautiful old-vine grapes.
An incredible wine now, but will age beautifully over the next 10 years.
