Valerio is hugely passionate about the ancient Ribolla Gialla grape, which is grown almost exclusively in the hills of north-east Italy and across the border in Slovenia. He’s succeeded in putting this underrated gem firmly on the Italian wine map.
Ribolla is all about freshness, delicacy and minerality, so it’s no surprise it works well as a still white too. As Dr Catherine Gilby MW notes “It reminds me rather of Albariño or Grüner Veltliner in its classic style, giving refreshing, vivid and pristine wines” (Jancisrobinson.com).
Expect crunchy green apple and zesty lemon, with a whisper of delicate herbs on the refreshing finish. Serve well chilled as an aperitif, or pour alongside seafood, light pasta or crisp salads.
