For value in Champagne, it's wise to look out for small family producers. This is a rich style from a House founded in 1951 by Henry Nicolo. That was in the Côte des Bar, in the south of Champagne, with vineyards on south-facing slopes, and chalk, marl and limestone soils. Third-generation David Nicolo leads it today and took another Côte des Bar family estate, Champagne Camille Paradis, into the fold in 2013. They pride themselves on sustainable methods in the vineyards, growing the classic Pinot Noir, Pinot Meunier and Chardonnay, plus a little Pinot Blanc. The Prestige – 70% Chardonnay, with Pinot Noir – includes Reserve wine for added complexity. With a creamy mousse, freshness and biscuity complexity, it's a great celebration fizz.
